2 tsp sesame seed
2 raw beetroot
3 tbsp low fat natural yoghurt (1%)
1 tbsp reduced fat mayonnaise
cracked black pepper
5 spring onion, chopped
1 handful fresh coriander, (optional)
1 tbsp salted peanuts
1. Heat a non-stick frying pan over a medium heat and lightly toast the sesame seeds for a few minutes until golden brown. Set aside to cool.
2. Peel and grate the beetroots.
3. Grate the apples.
4. Mix the beetroot, apple and all the remaining ingredients in a bowl and serve topped with toasted sesame seeds.
