MEXICO: Guacamole

You will need:

2 large ripe avocados
1 large firm tomato, finely chopped
1/2 medium onion, finely chopped
3 tablespoons coriander, finely chopped
Juice of 1 lime
Salt and pepper
Optional: 2 chilis, finely chopped

How to make

1. Chop up the tomato, onion, coriander and chilis (if you’re using them).

2. Mix them all together, add a bit of salt and pepper and squeeze the lime juice over the mixture.

2. Cut the avocados in half and spoon out as much of their insides as you can.

3. Mash the avocado flesh with a fork, then add it to the other ingredients and mix well.

Sit the avocado stones in the mixture and take them out just before you serve it. They will stop the mixture from turning brown.

Serve the guacamole as a dip with tortilla chips or chopped up vegetables.
