Warm Kale and Chickpea Salad

Ingredients

  • 1 clove of Garlic
  • 1/2 Onion
  • 1 Chilli
  • 1 Zucchini
  • zest of 1 Lemon
  • juice of 1 Orange
  • 1 Cup of cook Chickpeas
  • pinch of Thyme
  • Bunch of Kale
  • Cherry Tomatoes

Method

  1. This recipe starts with cooked chickpeas. You can used canned or checkout our chickpea recipe for really tasty results.
  2. Chop your onion, garlic, chilli and zucchini and add to a pan on medium heat with a good glug of olive oil. Add Thyme, zest and salt and pepper – sweat this down until nicely cooked.
  3. Slice all your cherry tomatoes and add them along with your chickpeas to the pan. Make sure everything gets a got coating of oil. When the tomatoes are starting to wilt and the chickpeas are warm squeeze the juice of 1 Orange into the pan – this will stop the cooking process. Let the flavours come together for a minute. While this is happening chop your Kale and bump into a large bowl. Now tip everything from you pan (including the liquid) on top of your chopped kale. Give everything a mix and toss.
  4. Serve immediately.
