Yiaourtopita Yiaourtopita Recipe

For Cake:
1 cup melted butter, cooled
2 ½ cups sugar
5 eggs – slightly beaten
3 teaspoons baking powder
1/2 teaspoon baking soda
1/2 cup milk
1 cup yogurt
1 cup chopped walnuts
3 cups sifted cake flour

For Syrup:

2 cups sugar
3 cups water

Begin by making the syrup:
Bring the sugar and water to a soft boil and cook for approximately 20 minutes or until the syrup has thickened. Take off the heat and set aside to cool.

For the cake:

Preheat your oven to 350 degrees.

In a separate bowl sift together the flour and the baking powder and set aside.

With an electric mixer, beat the butter and the sugar, on high, for approximately 20-25 minutes. The mixture should be become very creamy and light in color. Add the eggs and continue to beat for approximately 5 minutes. In a cup dilute the baking soda with the milk, being sure to mix well, and add to the mixture. Mix for an additional 5 minutes. Turn the mixer down to low and add the yogurt and nuts and mix well. Slowly add the flour mixture until incorporated.

Pour into a greased 9×13 pan and bake for 1 hour or until golden, or until a toothpick inserted in the middle comes out clean.

Remove from the oven and pour the syrup over the cake and let stand for a few hours to allow the syrup to soak into the cake.
